OVEN FRIED CHICKEN

Oven fried chicken served at Teibel's Family Restaurant in Schererville, Indiana is the best fried chicken I've eaten. On the corner of HWY 30 and HWY 41. What was called the crossroads of the nation before our interstate system was built. It's been there for more than 60 years.

Now don't confuse oven fried with similar baked chicken recipes. They are VERY different. I've been trying to duplicate Teibel's chicken for 30 years. I think I'm close. I make this for gatherings. I use any leftovers for chicken and dumplings. Add this one to your easy chicken recipes file.

HEALTHY DINNER RECIPES TIP: Corn on the cob, mashed potatoes, cole slaw and pumpkin pie are excellent companions for this chicken dinner.

NOTES: Don't crowd chicken, let heat circulate between pieces to brown better. Adjust the cooking time so chicken is golden brown and crispy. If you undercook it, the coating is soft.

Oven Fried Chicken

  • 1/4 cup vegetable oil
  • 1/4 cup butter
  • 1 clove garlic, crushed
  • 3/4 cup plain bread crumbs
  • 1/4 cup flour
  • 2 t. salt
  • 1 t. black pepper
  • 1/2 t. cayenne pepper, to taste (OR 2 t. paprika)
  • 8 chicken pieces (your choice-legs, breasts, wings, thighs)
  1. Trim excess fat and skin from chicken pieces, rinse under cold water. Pat dry with paper towels and set aside.
  2. Heat oven to 375F. In shallow 12 X 9 inch cooking pan (like a jelly-roll pan) add oil, butter and crushed garlic, put in oven to melt. When melted, loosely mix oil and butter, REMOVE garlic.
  3. In large plastic bag (1 gallon) add bread crumbs, flour and seasons. Seal bag and shake to mix. Roll chicken pieces in melted oil and butter, then add 3 pieces of chicken at a time to bag, seal and shake to coat, set chicken aside on a piece of wax paper or plate.
  4. When all the chicken is coated, place in cooking pan (with the oil and butter), skin side down. Bake for 45 minutes. Turn over with sturdy spatula and bake 5-10 more minutes until top gets bubbly.
