Cheeseburger recipes are as wide and varied as the many regions in the U.S. Let's cut calories. Hamburgers you order in restaurants can exceed 1,000 calories. A Whopper with cheese and bacon has 770 calories compared to a McDonald's Quarter Pounder with cheese at 510 calories. A 260 calorie difference. Make that exchange a couple times a week and lose eight pounds in a year.

I've known many people who lost significant amounts of weight by making hamburgers at home instead of buying them at the drive-through. Reduce fat and calories in your hamburger and cheeseburger recipes by using 90/10 or 95/5 ground beef. Use Miracle Whip or Kraft Mayo w/olive oil reduced fat mayonnaise.

NOTES: Cook outside on the grill or inside using a cast iron skillet. Use 90/10 (beef/fat) ground beef. Sirloin is my favorite. Get your buns at a quality bakery.

Try broiling (or use a grill) your own favorite peppers. Poblano, jalapeno, anaheim, banana, habanero, serrano, casabel, or any of the more than 200 varieties. It's real easy. Line a cookie sheet with foil, place halved and seeded peppers skin side up in a single layer. Put under broiler until skins are black and blistered. Place in plastic bag and let cool inside the sealed bag. Peel off skins and chop or slice. Make ahead of time and refrigerate or freeze.

SERVE WITH: Baked beans, tossed salad and plenty of homemade iced tea.

Texas Green Chili Cheeseburger

  • 1 lb. ground sirloin
  • salt and pepper to taste
  • poblano peppers (grilled and sliced)
    OR/ canned roasted green chilies drained and chopped
  • 4 slices swiss cheese
  • 4 potato buns
  • 4-8 thin slices tomato
  • 4 thin slices onion
  1. Heat your grill or cast iron skillet. Season beef with salt and pepper. Form four, thin patties (they will shrink to fit bun when cooked).
  2. Cook over medium hot heat about three or four minutes on the first side. Until nicely charred. Flip and top each with a tablespoon of chilies and slice of cheese (cheese on top). Cook for another 2-4 minutes until cheese is beginning to melt.
  3. In a separate pan or grill, toast the inside of hamburger bun.
  4. To assemble, place tomato and onion on bottom bun and top with the hamburger.
